Wild-blueberry glaze, a dessert in a bag.
Blue Berry.
Wild-blueberry glaze cooked down until it is a sticky candy-coat, not a syrup. A six-year-old will pick this over a chocolate bar, and the adults at the same table will quietly go back for a second handful.
Blue Berry is the one people ask for the most and the one I rotate off in the deepest of summer, before bringing it back for fall and the holidays. The glaze is wild blueberries I cook down with a touch of sugar and lemon until it reduces to a candy-coat, not a syrup. It is the bag that disappears fastest on any dessert table I have ever put one on.
Hand-glazed in Marana
Cooked in small runs β pulled the second the kettle tilts right, then hand tossed in a copper bowl before the bag leaves the kitchen.
